Breakfast Veggies
My usual breakfast involves oatmeal and fruit - personally, I love a little bit of sweetness in the morning! But I do recognize that when I can get a few servings of veggies in for the first meal of the day, I feel a lot better as I go. And sometimes when the mornings are chilly, I love a warm, hearty breakfast!
This month, I’ve been roasting a sheet pan of brussels sprouts, carrots, sweet potatoes, purple potatoes, and onions. Then I can keep veggies in the fridge for the week, top them with a fried egg in the morning, and enjoy a warm breakfast that keeps me full for hours.
Eggplant and Halloumi
Okay, if you have not yet tried halloumi cheese, consider this your sign! I’ve been loving this eggplant and halloumi pilaf this winter. I typically make it with brown rice rather than white, since that is what I stock in the pantry, and it works well (with a bit of a longer cook time). Also, ras el hanout can be difficult to get in the U.S., so I make my own (this recipe is a good starting point), but you can also substitute with more cumin.
I want to take a second here to mention that this might not be what you expect to find on a health coaching blog. Yes, it is a lot of grains and cheese - because I LOVE grains and cheese! For me, this is a recipe that makes me feel good, it is easy to make, and I know I’ll feel satisfied after eating it. And all of those considerations sometimes take precedence over trying to get as many veggies into one dish as possible.
Butternut Squash and Kale Salad
My FAVORITE winter salad right here, you guys - kale, roasted butternut squash, apple, pepitas, goat cheese, and dried cranberries. I love to make a big batch of this salad on the weekend and have it to snack on throughout the week. This is another one that I get REALLY excited to see in my recipe rotation, so I need to share.
